One issue you may come across however is things in your interface that rely on click events, JavaScript-based widgets for example. iPad and iPhone treat a single-click as a hover (and so don't fire the click event on a single click, just apply any CSS hover-states) and a double-click as a single click. The way to get around this is to parse the UA string for iPad or iPhone and use touchstart instead of click when these devices are found.
